SALSA!!!

I have had a craving for some salsa ever since a good friend of mine made some homemade. So I decided to find a good recipe on the great site, PINTEREST!! And find one I did. Its a copy cat recipe of Chili's salsa, and who doesn't love that salsa! Pinterest directed me to  Six Sisters Stuff for their recipe! Can't wait to look over the whole site! They have a craft index that looks pretty promising.

I tweaked the recipe a little bit. I have a strange problem where I can never follow a recipe as is.=)

Please ignore the can of green chile peppers.
I thought I would use them and never did.

Chili's Salsa (copy cat recipe)
1 large can (28oz) whole tomatoes, Drain but leave a little juice
1 small (4 oz) can diced or whole jalapenos (not pickled)I used half a can of diced.
1 (10oz) can Mild Rotel (Don't Drain)
1/4 c. Onion ( i used a tad bit more)
1 tsp. Garlic salt
1 tsp. salt
1 tsp. Cumin
1/2 tsp. Sugar
1.5 tsp. Lime juice

Put everything in a blender or food processor and  puree till smooth! Serve with chips!

Taadaaaaa! Done. I bought enough to do a double batch.
And next time I promise to store it in pretty containers =)

Hope yall try and make some! If you do, let me know how it turns out!

Love to sew.

I have been dieing to make my daughter a one shoulder dress. Well today I busted out all my sewing stuff and got to it. Needless to say, my dining room is a complete disaster! And in turn my whole apartment is a disaster! Ugh, I need a house with my own sewing room!

Ok, so I scored this awesome vintage (I assume) fabric from the best Granny a girl could ask for. I have had it for 4 years and never knew what I use it for. I'm not saying its ugly, but its really not my cup of tea...Until now. The style of the dress made it lovable! And paired with a cute belt, cowboy boots and hat its PERFECT!!

My daughter loves it and thats all that I can ask for =) Now on to knocking about pair of comfy pants for each my kids, then calling it a night!

It was a Hot one today.

It is safe to say that I will NEVER get use to Tennessee summers. I feel as is this place is the hottest place in the world. Dramatic I know, But being raised all my life in Michigan, its still quite a shock.

I decided to take the kiddos to the park. And as soon as I uttered those words 'Wanna go to the park' I some how wished I could kick my own self in the ass. haha But I sucked it up and we had a fun time=) A hot fun time, but they loved it.  Its amazing how sweaty they were and still content to run around everywhere. If I were being chaised my crazy face eating zombies today I probably would have been like " Go for it ".  Can you tell I don't like the hot? Yea, I thought so. So that was basically our day =)

Mayo Parm Chicken with French's Onion

Well, I am STUFFED! This chicken is one of the easiest and most delicious recipes for chicken. Its a new found family favorite for us. Even my kids will eat it, and thats saying alot! AND!! Drum roll.... Its only 5 ingredients! Tell me thats not amazing! The chicken turns out so juicy and tender, like I said in an early post *Drool Worthy* So do you want the recipe? I thought so!(I had to check my recipe and stumbled upon The Enchanted Cook blog, I changed the recipe just a little. But check hers out too! It looks amazing!) The Enchanted Cook (Parmesan Crusted Chicken)

Mayo Parm Chicken w/ French's Onion
425 degrees for about 30 min or until
chicken is no longer pink in side and juices run clear.
Ingredients:
  • 4 Boneless Skinless Chicken Breasts
  • 1/2 Cup Mayo (I use Hellmans)
  • 1/4 Cup Shredded Parmesan Cheese
  • 3-4 Tablespoons Grated Parmesan Cheese
  • French's Onions. (I used about a cup, maybe a little more. You'll need to smash them up,and if you need more just smash some more =)
Cover a 9x13 casserole dish with foil, give it a quick spray of Pam so the chicken won't stick. Mix mayo and both Parmesans together in a bowl, or even in the measuring cup. And mix well. On a plate place your first chicken breast and slather the top with your mayo/parm mixture. Place in your casserole dish and do the same to the remaining. Once they are in the casserole dish sprinkle the French's Onions over the breasts and cover good! Pop them in the oven. =)

Back Again!

Wow, it has been awhile since I have been on here! Everything is different! Hopefully I can learn all the new tricks fast and hopefully I will start posting more =) Today, My kiddos and I are just having a lazy, sit around and watch cartoons day... well, who am I kidding thats most everyday! haha Anyway, I am trying to think of a project to do later today. And hard to say even with Pinterest I am having a hard time! But I think repainting my sons letters (for his name) are going to make my list. And also his shelf. Not too creative but something to do after bed time I suppose. Anyway, Will post later. I am about to be making some amazing Mayo Parm chicken covered in Frenchs Onions. Yup. Drool Worthy!

I ALMOST FORGOT! My daughter, Alivia, was our local news stations "Cute Kid Of The Day!!" They told a little bit about her and had her picture up for all of Memphis and the surrounding area to see=) And they also called her 'AhLeaveAh' which just boggles my mind, cause really how hard is it to say 'Alivia' its 'Olivia' with and A! But.. we are very excited for her!    Alivia Jeanene, Cute Kid of the Day on June 20th 2012
